Low Carb – Viking – Taco Salad
2 lbs Ground Chicken Breast
Non-stick spray such as Pam
2 packages Taco Seasoning
Iceberg lettuce (pre0-shredded)
1 bag loaded Taco Chips (Quest Protein Chips)
Taco Sauce – your favorite type.
Lite Sour Cream
Spray 12-inch non-stick skillet with non-stick spray. Brown chicken breast in the skillet until cooked.
Add taco seasoning to the cooked chicken breast with approximately 1/4 cup of water. Stir and let simmer to incorporate flavors
For each serving add iceberg lettuce to a serving bowl and add 9 oz. of chicken mixture. The amount of chicken mixture will vary depending on your protein intake requirements.
Sprinkle protein chips into the chicken and lettuce mixture and top with your favorite taco sauce and serve with Lite Sour Cream.
